{The Incredible, Edible Egg}

I don't know what I like more -- beans or eggs. (Organic, brown, grain fed, free range
eggs, of course.) They're two of my biggest protein sources.

I made a new recipe recently avec oeufs. Great for a day when I didn't want to turn
on the oven. Perfect for lunch or dinner. Fresh and light. ** Click here for the recipe.
NOTE: When I make it again, I'll add a little more hot sauce and go a smidgen lighter
on the dressing. Also, I used arugula instead of lettuce or spinach.








Let's see. Otherwise ...

* Lindsay is in town for a few days. We're going on a date to the hair salon later today.
I'm totally looking forward to some time with her & updating my hair color.

* A whole 'nother round of tile guys will be here shortly. They're going to totally undo
what the first guy did (tear, sniff) and redo it the way it should have been done in the
first place. So, it would appear that we're going to get that bathroom remodel wrapped
up afterall, and I'm pretty happy about that.

* Are you doing anything special for Earth Day tomorrow? I can't wait to see Oceans!

arugula and avocado are my 2 favourites together...do you know if you blend them with a little balsamic vinegar it makes a wonderful cold soup...an excellent way to get loads of vitamins. (i'm a bit of a raw fooder)
