{Eastern Indian Stew}

This was my second time making Eastern Indian Stew (recipe here).



A few, simple changes made to the original recipe and this batch was extra delicious.
* used spicy curry instead of regular and more of it then called for
* added two cans of chopped tomatoes, drained
And one trick that pulls the whole thing together ...



Patagonia orange blossom honey (made here in Arizona) mixed into the yogurt
topping. So perfect. Seriously wonderful. You could use regular honey, too, I'm sure.

Anyway, fast but satisfying ... full of protein and flavor ... warm and cozy.
Just thought I'd pass it along, in case you're looking for something different.
Bonus: No animals were injured in the making of this meal. :)

Your stew looks great! And easy is a word I love when applied to food! Great idea with the additions! Spicy curry and honey! Mmm... great combo I bet! Satisfies two sensations at once!
