{Meatless BLT Pasta}

The BLT stands for butter lettuce, tomato and leek. This is a Rachael Ray dish that's quickly
become a new favorite around here. We've made it twice so far and will be making it again.



The main work in with this recipe is in cleaning and prepping all the vegetables.
Once that's done, it goes by pretty quickly. The main steps are:
* make a pesto in the food processor
* boil pasta
* saute/steam veg
* mix it all together
* top it with lemon juice, Parmesan and fresh butter lettuce






You could use this process with different ingredients to create new flavor profiles, but we
love her arrangement. I changed it up just a bit. I used half the butter lettuce, garnishing it
with a little from the first head of lettuce instead of topping it with a whole additional head.
I also doubled the tomatoes and was generous with the lemon juice and Parmesan.

I love Pesto but never thought to combine it with pasta AND a salad in ONE DISH!! wow, that might be good!
