{Week 3 - Operation Cook More}

Another week of not a whole lotta cooking! :) And again, it's a good thing I made the goal
to cook more in October because it forced me to make a plan, get some groceries and cook
some things on Saturday before the week was up.

Monday - leftovers
Tuesday - candy and Diet Coke at the theater with Alejandra
Wednesday - cottage cheese and an English muffin. Made banana bread for a cute boy in my house that loves it!
Thursday - dinner out with D at Latitude 8 (Thai) in dt Chandler.
Friday - carry out pizza from Sauce.
By Saturday, I was ready for some home cooked food!



So, I made tuna noodle casserole. A ground turkey meatloaf for D. And a cherry & berry crumble.

Tried a crumble topping recipe from Food Everyday and liked it...

Emeril's Crumble Topping
In a large bowl, combine 6 Tblsp (3/4 stick) cold unsalted butter, cut into small pieces.
Plus 2/3 c. all-purpose flour (spooned and leveled), 2/3 c. rolled oats, 3/4 c. packed light
brown sugar, 1/2 tsp. ground cinnamon, 1/2 tsp. ground nutmeg, and 1/4 tsp. salt. Using
an electric mixer, beat on low until course crumbs form.

This week, I'm hoping to have a chance to cook a little sooner in the week, too.

My god girl! Why don't you come live with me! I need someone to cook for me now that I'm getting larger and slower in the kitchen!
I just saw/read all your food making in the past few weeks. Looks great! The banana bread, all the enchiladas, tuna casserole (one of my favs!!!) and that crumble topping dessert!
I'm serious, I'm buying your one way ticket now!!!
David better be gaining some weight!!!

Sam, what are you preparing for...Armageddon?? Please! Come live with me! I'll work and provide the income, I'll even take care of the housecleaning. All you will have to do is cook! Oh...and do the dishes. (No, I do not have a dishwasher!)
