{Week 2 - Operation Cook More}

Cooking more is a good October resolution for me. Case in point...
I ate Amy's burritos, cereal, leftover oatmeal, and not-good-the-first-time
leftover stir fry Monday through Thursday. Blah...

There just doesn't seem to be time to cook when I'm gone from 7:30AM to 7:30PM
four days a week. Then, this week, David was in New Mexico from Monday to Friday.
(Next week it's Monday through Wednesday.) I don't feel motivated to plan a meal
when there isn't anyone here to cook for or with. Same for grocery shopping.

But I'm learning that eating good food is an important part of taking care of yourself.
I want to make that a more habitual part of my life. It's healthier. It sends a message
to your brain that you're worth it. And it gives you the nourishment and energy you
need to think and be productive. So, I'm working on it, for all those reasons and more (homieness, included).

I can pretty much guarantee, if I hadn't established that intention, I wouldn't have
made anything this week. But instead -- with the goal in mind -- I planned and
accomplished two things from the kitchen:

Thursday night -- banana bread
I made two loaves and put one in the freezer for later. Yay.



Saturday -- enchiladas
(night time & CFL lightbulbs = icky pictures; please bear with me)


A batch o' chicken ones for D; vegetable ones for me...

And a whole extra pan for the freezer.

I may post my enchilada recipe this week. I had a special helper, and we stepped up
the sauce a notch. So, they turned out great!

Oh, I would love to eat enchiladas right NOW... for breakfast!! That sounds good and I'm hungry :)

I feel you on this one. I hate cooking. It doesn't interest me even though I love eating. :) With my competition at the gym I have a specific meal plan which is making my meal planning and grocery shopping a breeze. I still hate cooking, but it's minimal for the most part.

Good idea making stuff to freeze - that is a big helper I think.
