{Recipe: EZ, Healthy & Fabulous}

You're gonna want to make this. Unless you're anti-fish.

I only dirtied a knife, cutting board, zester, and one small bowl
when making this meal. No clean up! It took ten minutes to
prep. Veg and protein are all in one. Plus, it was healthy and
had awesome flavor. Tough to beat, I'm tellin' ya.

* This makes enough for four pieces of fish. We each ate a
packet and a half. We would make this with way more veggies
next time. Also, excuse the gorgeous energy efficient bulb
lighting. Not good! *

INGREDIENTS:
2 tsp lemon zest
2 tsp dried italian seasoning
1/4 tsp red pepper flakes
1/4 tsp anise seed, crushed
coarse salt and ground pepper
1 small sweet onion (like vidalia) thinly slided, crosswise
6 small zucchini, thinly sliced
4 fish fillets (we used halibut)
1 large tomato, seeded and chopped
olive oil

Mix seasonings in a bowl.



Get out a 12 x 16 sheet of aluminum foil for each piece of fish.
On one half of it, place onions, leaving two inches of foil around
the perimeter. Over onions, add a layer of zucchini. Then fish.
Sprinkle with seasoning. Top with tomatoes. Drizzle with oil.



Fold foil over. Crimp edges.



Cook on grill at medium heat for 10-12 minutes.
And eat!
