I'm a recipe girl. When I adlib in the kitchen, it's not
generally very successful. Except for when I did it last
week. I made a really simple, healthy dish. Must share!
You could easily add shrimp or chicken for protein. And
if you don't have a vegetable that's in the recipe, there
are surely many substitutions that would work. This version
came together based on what I had at home.
Ingredients:
long pasta
olive oil
2 cloves garlic
1 onion, diced
2 heads broccoli
4 large carrots, sliced
1 red pepper, diced
pasta sauce, 1/2 a cup or a cup
1 tomato, chopped
1 can of corn
1 10 oz. box frzn spinach (thawed/drained) or fresh equivilent
salt
pepper
1/8 - 1/4 tsp red pepper flakes
basil (fresh would be great but i used dried)
shredded cheese
Boil noodles in one pan. I've recently become hooked on these...
In another, heat olive oil over medium heat.
Add 2-3 cloves minced garlic and one medium yellow onion
until slightly translucent. Add pepper, broccoli, carrot.
Add pasta sauce, as you see fit. Add rest of vegetables
and seasonings. Cover and sautee over low heat for 10
minutes. Drain pasta. Then, add pasta to veg sauce.
Cook for as long as vegetables seem to need it. Sprinkle
with shredded cheese. Stir to melt cheese, and EAT!
